If COVID-19 isolation is getting to you, UTSA Libraries has a delicious idea you can sink your teeth into. UTSA's Amy Rushing said that even creative inspiration can come from things like COVID-19. So they've gone to their archives and assembled a selection of Mexican dessert recipes.
"The inspiration came from the idea that we're all home right now and people are cooking more, not going out to eat as much," she said.
This collection's overall title is Recetas — that's recipes in Spanish — but the rest of the title has a dash of humor to it.
"The byline is Cooking in the Time of Coronavirus. Recipes from the Mexican Cookbook Collection,” she said. “We thought we'd make a little riff on Love In The Time of Cholera."
Desserts are normally saved for last, but not this time.
"We started with desserts because we figured why not make the best for first? We just took a sampling of recipes from a variety of different cookbooks in our collection and compiled them into a little mini cookbook," Rushing said.
The cookbook is available online, and you can access it in a variety of ways.
"You can download it as a PDF or you can download it as an ePub into your favorite eBook reader. It's just like a little booklet; you can print it out if you want to," she said.
Rushing says that this is only the first foray; there may well be more.
"We would like to do a whole series of these including soups and salsas and main dishes and even drinks," she said.
As much bad has come out of the coronavirus pandemic, every now and then, something good emerges, too.
