First up, Mayor Ivy Taylor shares with us her Aunt Audrey's recipe for Sweet Potato Crunch.

Aunt Audrey’s Sweet Potato Crunch

Ingredients

  • 6 cups        Mashed sweet potatoes
  • 2 cups        Sugar
  • Dash Salt (optional)
  • 1 teaspoon          Vanilla extract
  • ¼ tsp Nutmeg
  • ¼ tsp Cinnamon
  • 2/3 cup      Milk
  • 4       Eggs

Directions

Mix all ingredients together. Pour in a baking pan and smooth out.

Topping Ingredients

  • 2 cups        Brown sugar
  • 2/3 cup      Self-rising flour
  • 2 cups        Pecans (crushed)
  • 2/3    Butter (room temp)
  • 1 cup          Quaker Quick Oats

Directions

Mix all ingredients together. Pour in a baking pan over sweet potatoes. Bake 60-65 minutes at 300 degrees. After baking, serve and enjoy!
